The Chair Ainia finalises his first project of support to a project of end of career

The work of end of career that has received the support of Ainia has been the one of a student of the department of Technology of Foods of the Upper Technical School of Engineering Agronómica and of the Half Natural of the Polytechnical University of Valency. The project, that has had a length of twelve months, has studied the influence of the digestive processes on the biodisponibilidad of diverse present nutrients in the foods.
According to José Enrique Carreres, of the Department of New Products of the technological centre Ainia, “the study realised has contributed new knowledges related with the influence of the methods of extraction equipment equipment on the composition of the phenolic compounds (natural substances with antioxidant capacity) in leaves of olivo and on the big influence that have the processes of digestion. In this sense, has put of self-evident a drastic decrease during the digestion in vitro, by what will have to tackle to future strategies of protection of said extracts with technicians of encapsulation that minimise this effect”.
During 2012, the Chair Ainia will develop a total of ten projects of scholarships of end of career, headed to lines of investigation of complexity and maximum interest: biotechnology; biological diagnostics by means of biochemical and molecular technicians; engineering of foods; hygiene; control of quality; new products (functional and healthy foods); design of containers; operations of processed or sensory analysis and investigation of the consumer.
