Sardine: a traditional product that innovates

Several researchers of Irta in Monells (Girona) they carried out a series of studies that will have product based on the sardine and as major objectives study and improve various methodologies of conservation, as well as the development of new products based to this fish, such as salted, marinades, marinated and pâtés. Fishing for sardine in Catalonia is the 12,000 tons per year, with a slight decline des of the year 2000 in which catches were around 14,000 tons.
