The Anchodina is the spine of the sardine that is cleaned by hand one to one by removing the skin and the bones and after being seasoned dry for a few days preserved in oil. They are made in a manner similar to the traditional anchovies but with a distinct flavor, a different texture, and a much more affordable price.
Similar to the anchovy but brighter color, its texture is fleshy and firm, saline aromas and a touch of salt.
