Presentación
Livestock dairy is the first industry formed by farmers who produce the genuine Torta del Casar, with certificate of the controller Council of denomination of protected origin (DOP).
Born in 2005 linked to farmers always, now associated industrially, but guaranteeing a product where tradition and technology are compatible. On the one hand do not lose the natural and artisanal character of yesteryear and other milk technology research contributes and guarantees the more rigorous standards of health and hygiene.
Torta del Casar is a cheese made exclusively with selected raw milk from sheep Merino and entrefinas, which together with the salt, vegetable rennet (Cynara cardunculus), mature for at least 60 days under certain conditions of temperature and humidity. The result, its original appearance atortado, as cakes of flour, by the lack of consistency of the semi-hard rind, for this reason farmers once considered him defective cheese. Interestingly today this peculiarity, together with its original flavor and creaminess, make it one of the best cheeses from Spain, admired and imitated all over the world.

We know the product from the outset. Our selected sheep graze taking advantage of the nutritious pastures of a unique ecosystem: the Prairie and the Mediterranean forest of la dehesa. Pastor and their livestock have traditionally contributed to the ecological balance and the maintenance of the ecosystem, its flora and its fauna.
As a result the farmer gets a high quality milk that is automatically distributed to dairy cattle for the elaboration of the Torta del Casar and guarantee their traceability from beginning to end.
