Stabilization plants: continuous cold tartaric stabilisation

The tartaric stabilization of wines is one of the problems that every Winery should confront and resolve with the appropriate equipment.

A good stabilization gives really great quality immediately detectable by the final consumer introduce you to wines.

Della Toffola proposes a complete typology of efficient facilities that adopt two different methods of treatment: physical method with the Polarsystem models and stabilization DT the electrochemical method with the teams of resins.

Plants for stabilization PolarSystem consist of PolarCryo units eventually combined with PolarPoint laboratory instrument.

PolarCryo units, using the cold, provide continuous effective stabilization either tartaric or colorants compounds in wines.

This result is always guaranteed, regardless of the physical/chemical state or concentration present in the wine to be treated (KHT) potassium bitartrate.

Other systems do not allow the stabilization of, for example, wines with a high content of dye compounds, or wine with a high alcohol content or gaseous content.

PolarCryo units, thanks to its characteristics, allow to overcome even these difficulties which may present the wines in the stabilization phase.

If the wines to try are especially difficult, special units PolarCryo RC is combined device PolarVortex.

RC units are also equipped with built-in agitator components of higher dimension as the scraper and Crystallizer.

PolarVortex, mounted between the dish and the filter, separating crystals of small dimension that do not reach the central axis of the Crystallizer, and which therefore do not precipitate.

These small crystals are transported by the updraft and leaving the Crystallizer.

Effect of swirl, larger crystals remaining in separator because of its greater specific weight are separated from wine and sent to the (reactor) cooling unit.

Advantages: The wine that enters the filter is clean longer intervals between cleanings.

Crystals separated still active are sent to the refrigeration unit where cause a natural insemination which increases the concentration of the KHT in wine to improve its precipitation in the Crystallizer.
