Next day on detection, control and elimination of biofilms in the food industry

January 20, the Auditorium of the building of the IRTA in Monells (Girona) will host the day 'Detection, control and elimination of biofilms in the food industry'. The session delves on the problems posed by the presence of biofilms in the food industry, offering the possibility to take advantage of the knowledge and experience of experts. The seminar, organized jointly by a company that specializes in food hygiene Itram hygiene, Senta (Center of new food technologies), IRTA (food technology) and the Escola Agrària de l'Empordà (give Generalitat de Catalunya).
Food security has currently problems as the adherence of microorganisms to surfaces, known as biofilms, one of the fields in the food sector more importantesa treat. The formation of biofilms does not seem to be restricted to any specific group of microorganismosy today it is considered that, under appropriate environmental conditions, all bacteria are capable of forming them. We can find biofilms in all environments where there are bacteria: in the industrial, clinical or natural environment. They only need a hydrated environment and a minimal presence of nutrients.
The presence of biofilms in the food industry can be an important technological and of public health both problem. One of the main problems in the food industry is the survival of microorganisms, pathogenic or alterantes due to an inadequate disinfection of surfaces in contact with food. Biofilms, formed on the surfaces in contact with food, are the main cause of pollution of the final product.
