Advances in the production of elaborated cárnicos safe and healthy

With this title has published the book that collects the summary of the activities tackled in the field of the project 'Products cárnicos for the 21st century: insurance, nutritious and healthy' (Carnisenusa), funded in 2007 by the Ministry of Education and Science inside the program Consolider-Wit 2010.

This book offers information on the technological means that they can use for the higienización of products cárnicos, fundamentally the smart for his consumption, with the end to guarantee the alimentary hygiene (microbiological and abiotic), some of analytical nature, when offering details of new methods (physical, chemists or microbiological), or modifications of the existent, for the control of the composition and microbiological quality or like tools of the trazabilidad of the products; and others, to access to strategies that allow the development of formulations directed to the obtaining of healthy and functional products.

Likewise, the book provides information on the contributions of the investigations realizar in Carnisenusa for the universal knowledge in the field of the meat and the products cárnicos, as it derives of the relation of scientific articles that appears in the annex I, of which, a big majority have been published in magazines of international prestige.
